Spicy Seafood Jambalaya


Inspired by Terese’s Spicy Seafood Jambalaya, here is my version:

1 tablespoon olive oil
1 yellow onion, chopped
Kielbasa sausage, 8-10 pcs 1/4″ thick slices of
1/4 tsp chilli flakes
2 cloves garlic, minced
1 pinch dried thyme
1 1/2 tablespoons cajun seasoning (mix of cayenne, white pepper, black pepper, paprika, onion powder, garlic powder)
1 teaspoon cayenne pepper
1/2 cups wild rice
2 tablespoons tomato paste
3 roma tomatoes, cubed
1/2 cups chicken stock
1 cup white wine sangria
1/2 lb blanched spot prawn
1/2 lb live clams
1 squid, tentacles only
1/4 cup green onions, to garnish
pepper, to taste

Pairing with white wine sangria with sliced strawberries, fresh mango and orange – nom nom nom…
